Spring Pea Soup

Ingredients
- 2 cups fresh or frozen peas
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons butter
- Optional: chopped fresh mint or microgreens for garnish. Additionally, a dollop of sour cream brings a hint of creamy comfort.

Steps
Heat butter in a large pot over medium heat. Add the chopped onion and garlic and sauté until the onion is translucent, about 5 minutes.
Add the peas and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the peas are tender, about 10-15 minutes.
Using an immersion blender or transferring to a blender in batches, puree the soup until smooth.
Stir in the heavy cream and season with salt and pepper to taste.
Serve hot, garnished with chopped fresh mint or your favorite microgreens and sour cream if desired.
