Purple Barley Cranberry Salad
Ingredients
- 1 ½ cups cooked 1000 Springs Mill Purple Barley (drained)
- ¾ cup dried cranberries
- 1 Tablespoon finely chopped red onion
- 1 cup coarsely chopped walnuts
- 1 bunch of Arugula
- Mix all of the ingredients in a large bowl
- Toss with dressing
- 1/2 cup orange juice
- 1 teaspoons lemon juice
- 1/2 cup of olive oil
- Salt and pepper to taste
