Minted Fresh Carrots

Ingredients
- 5-6 carrots, cut into strips or slices (Available at your local Farmers Market during season)
- 2 Tablespoons Idaho butter
- 1 Tablespoon Idaho honey
- ¼ cup mint jelly or 2 teaspoons fresh mint, chopped

Steps
Peel and slice carrots.
In medium saucepan, cover carrots with water and bring to boil.
Reduce heat and cook carrots until tender-crisp – approximately 10-15 minutes depending on size of slices/strips.
In microwave safe bowl, combine honey and butter. Heat just until butter melts
When carrots are done, drain water then return to saucepan.
Add honey mixture and chopped mint; toss to coat.
Simmer until glazed, approximately 5 minutes.
Garnish with fresh mint leaves.
