Idaho Strawberry Rhubarb Pie

Ingredients
Pie Filling:
- 3 1/2 cups 1/2-inch-thick slices trimmed Idaho rhubarb (1 1/2 pounds untrimmed) [Found at Farmers Markets]
- 1 16-ounce container Idaho strawberries, hulled, halved (about 3 1/2 cups)
- 1/2 cup (packed) White Satin golden brown sugar
- 1/2 cup White Satin sugar
- 1/4 cup cornstarch
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 large Idaho egg yolk beaten to blend with 1 teaspoon water (for glaze)
Idaho Pie Crust:
- 2 ½ Cups Idaho Flour, plus extra for rolling
- 1 cup unsalted Idaho butter, very cold, cut into ½ in cubes
- 1tsp salt
- 1 tsp White Satin sugar
- 6 to 8 TBSP ice water
