Gluten Free Cherry Cobbler

- 5 cups pitted fresh sweet Idaho cherries
- 1 tablespoon fresh squeezed lemon or lime juice
- 1 cup plus one tablespoon sugar
- 1 cup Idaho teff flour
- 1 local egg
- 1/3 cup Idaho butter, melted
- ½ cup heavy Idaho whipping cream

Preheat oven to 375 degrees. Coat an 8” baking pan with non-stick spray. Place pitted cherries (whole or halved) in a bowl, sprinkle with lemon or lime juice and toss to coat. Place cherries in prepared pan. In medium bowl combine sugar and 1 cup teff flour. Stir in egg until thoroughly blended, mixture will be crumbly. Top cherries evenly with flour mixture, then drizzle with melted butter. Bake 35-40 minutes until cobbler is golden brown and cherry juice is thick and bubbling. While cobbler is baking, whip cream until it begins to thicken. Add remaining 1 tablespoon sugar and continue whipping until cream forms soft peaks. To serve, spoon cobbler into individual dishes, top with whipping cream and garnish with a fresh stemmed cherry if desired.
